Red Lentil Daal with Sunflower Seeds
For 4 servings
- 2 onions - chopped
- 2 tbsp or 30ml of water or vegetable stock
- 2-3 crushed garlic cloves
- 1 tsp turmeric
- 1 tsp cumin seeds
- 2 tsp ground coriander
- 350g (12oz) red lentils
- 125g (4oz) sunflower seeds
- 2 pints of water
- 2 tbsp (30ml) oil
- Salt to taste
- Handful of finely chopped fresh coriander.
Brown the chopped onions in the oil. Cook for a few minutes. Then add garlic and spices, cook for another minute.
Add lentils and water, bring to boil. Cover the pan, simmer for 20 minutes or so.
