Red Lentil Daal with Sunflower Seeds

For 4 servings

  • 2 onions - chopped
  • 2 tbsp or 30ml of water or vegetable stock
  • 2-3 crushed garlic cloves
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 2 tsp ground coriander
  • 350g (12oz) red lentils
  • 125g (4oz) sunflower seeds
  • 2 pints of water
  • 2 tbsp (30ml) oil
  • Salt to taste
  • Handful of finely chopped fresh coriander.

Brown the chopped onions in the oil. Cook for a few minutes. Then add garlic and spices, cook for another minute.

Add lentils and water, bring to boil. Cover the pan, simmer for 20 minutes or so.
