Spinach with Paneer

Serves 4
Preparation time: 35 minutes

  • 500g drained washed spinach
  • 2 tablespoons vegetable oil (not olive oil)
  • 1 teaspoon cumin
  • Half tablespoon ginger
  • 3 cloves of garlic
  • 150g chopped onions
  • 2 large tomatoes
  • 1 green chilli
  • half teaspoon garam masala powder (available from all supermarkets)
  • 225g paneer (available from all supermarkets) cubed
  • 2 tablespoons of single cream

Place the spinach in some water in a heavy based pan. Cook on high heat for approximately 5 minutes. Take pan off cooker and allow it to cool some what. Drain spinach. Puree in blender with some of the water that the spinach has been cooked in.

Fry cumin seeds in oil until dark. Chop onions in food processor. Fry onions until golden brown.

Then chop tomatoes, ginger, garlic and chilli in the food processor. Mix this tomato mixture in with the onions.

Pour in the spinach puree, sprinkle on the garam masala powder. Reduce the heat, cook for five minutes till paneer is cooked.

Serve hot, with swirls of cream. This is an excellent dish with paratha, chapatti or naan.
