Vegetable Bean Bake
Serves 2
Preparation time: 35 minutes
- 400 can vegetable soup
- 200g lentils cooked (available in cans)
- 800g of mashed potatoes
- 400g fresh french beans
- 200g broad beans
- Fresh bunch of parsley, chopped finely
- 2 tablespoons of semi-skimmed milk
- Large handfuls of breadcrumbs
Put the cut green beans, broad beans, and soup in a flat ovenproof dish and mix well together.
Boil the potatoes and mash in a bog bowl. Use the milk to soften, adding in the chopped parsley.
Put the mashed potato on top of the soup and bean mixture in an ovenproof dish.
Put some fresh breadcrumbs on top of the potato. Put in a pre-heated oven for 10 minutes at 240C/475F/Gas 8.
