For 4 servings
- 4 courgettes
- A finely chopped red onion
- ½ tsp cumin seeds
- Paprika pinch
- A dozen cherry tomatoes
- 4 grated carrots or parsnips
Preheat oven to 190 degrees c or 375 F/ Gas Mark 5.
Slice the courgettes lengthways in half. Use a teaspoon and remove most of the flesh, leaving just about 0.25 inch in the shell.
Fill the courgette shells with rest of mixture and bake for 20 minutes.
