Nutritionists have been left astounded after Chris Voigt started his diet eating nothing but potatoes ended up losing over a stone in weight .
Weighing over 14 stone Mr Voigt, 45, head of the Washington State Potato Commission started his diet in protest against the US Department of Agriculture which is looking to replace potatoes in school menus with other vegetables .
The diet also reduced his blood sugar level and cholesterol, which reduced by a third.
He said, “I’ve been struggling being borderline high cholesterol for four or five years. I absolutely feel great. I’ve always had lots of good energy on this diet, I’ve had no strange side effects, I sleep well at night.”
In the two months he ate 400lbs of potatoes, about 20 individual vegetables a day.
He would prepare them by boiling them, mashing, slicing, frying and roasting them. For Thanksgiving he sculpted mashed potato in the shape of a turkey.
According the Mr Voigt potatoes contain more potassium than bananas and a single serving of potatoes has 45 per cent of the daily recommended intake of Vitamin C .
However there is a lack of fat-soluble vitamins like Vitamins A and E.
Mr Voigt agreed that a diet of spuds alone is not a long term option but felt he had proved that the vegetable has some health benefits.
