Vegetable Bean Bake

Ingredients
- 400 can vegetable soup
- 200g lentils cooked (available in cans)
- 800g of mashed potatoes
- 400g fresh french beans
- 200g broad beans
- Fresh bunch of parsley, chopped finely
- 2 tablespoons of semi-skimmed milk
- Large handfuls of breadcrumbs
Instructions
- Put the cut green beans, broad beans, and soup in a flat ovenproof dish and mix well together.
- Boil the potatoes and mash in a bog bowl. Use the milk to soften, adding in the chopped parsley.
- Put the mashed potato on top of the soup and bean mixture in an ovenproof dish.
- Put some fresh breadcrumbs on top of the potato. Put in a pre-heated oven for 10 minutes at 240C/475F/Gas 8.
